Introducing Trish Eichelberger as the new Austin Market Concept Chef! She's the new knife-weilding addition to the taste conoisseurs that work in the fires of the Drafthouse kitchen. Trish's life in the service industry began with her first job at the age of 15 at the Houston General Cinema Theater. Her career continued and her experience in fine dining grew to the point where she had back door access to all the fine dining kitchens around town and made a feast with 70lbs of butter. With a passion for the local farms, community events and the Austin food scene in general, she feels that the job is ripe with opportunity for both her and the Alamo Drafthouse.

Alamo Drafthouse is proud to announce the development of a new position at the company, Regional Concept Chef. As Alamo Drafthouse expands, maintaining a strong local influence at each theater remains a top priority. Regional concept chefs in each market will allow the Alamo Drafthouse’s menu and special event food pairings to be unique, seasonally rotating, relevant to their communities and sourced from local vendors. Former Highball executive chef Trish Eichelberger has been chosen to be the Austin Market Concept Chef. Expect future announcements for Concept Chefs in other regional markets.

She has competed in national fried chicken contests, designed and executed numerous feasts at the Alamo and carved out a strong reputation as the executive chef at the Highball. Before joining the Alamo Drafthouse in January of 2005, Trish Eichelberger worked for Rebecca Rather at the Bread Alone Bakery inside the Scholtzsky’s on South Lamar as well as Eddie Bernal at the 34th St. Café. After six years of experience, Trish left to concentrate on honing her skills at Mars Restaurant under the tutelage of Chef John Bullington. Since joining the Alamo Drafthouse team, Trish has served as the Assistant Kitchen Manager at the South Lamar location, Executive Chef at the Alamo Drafthouse Village, opened the Alamo Drafthouse Ritz, and then left the Ritz to open the Highball where the menu gained recognition for its “reimagined diner classics.”
