Alamo Drafthouse is thrilled to announce Thursday, March 8, 2012 as the opening date for Alamo Slaughter, a state-of-the art 8 screen venue located at the corner of Mopac & Slaughter Lane in Austin, TX. The full drink & food menu for the adjacent stand-alone 400 Rabbits cocktail lounge is available for the first time. Patrons will have the opportunity to sample the menu at an upcoming tasting event on Saturday, February 4th at The Highball.
The name 400 Rabbits, is derived from the Aztec goddess Mayahuel, the divine personification of the agave plant. According to Aztec lore Mayahuel gave birth to the Centzon Totochtin, which in English translates to The 400 Rabbits. These 400 Rabbits were fed by Mayahuel’s four-hundred breasts that produced fermented agave. The 400 Rabbits are said to be the gods of intoxication due to their strict diet of “tequila” and are a fitting namesake to the lounge at Alamo Drafthouse Slaughter Lane.
Alamo beverage director Bill Norris took a sabbatical to Jalisco last year to learn the production methods and history of Tequila and to prepare the 400 Rabbits menu (you can read about Bill’s travels here). Inspired by Latin American street food, Executive Chef John Bullington has created a selection of snacks that pair perfectly with Bill’s tequila-centric bar offerings. Although the cocktail menu features a wide variety of fine sipping tequilas and innovative tequila and mezcal cocktails, The 400 Rabbits will also offer a full line of other spirits. In honor of the upcoming opening of Alamo Drafthouse Slaughter Lane and 400 Rabbits, Alamo will be hosting a tequila paired dinner that will offer an advance taste of the menu with a sampling of the drink and food items from 400 Rabbits. The event will offer 5 courses, each paired with a signature drink from the 400 Rabbits menu. This advance sampling of the menu will be an intimate affair with room for 30 attendees. Tickets are $50/person and are available on the Highball website.

Tres Sabores: Refried White Beans with roast garlic cilantro oil and chile thread, warm roast tomato salsa with Cheddars avocado tomatillo
Torta Ahogada: Carnitas, pickled onions, refried white beans, cotija, on a toasted bolillo drowned in arbol sauce topped with fresh oregano and served with chips
Chicharrones: Freshly fried pork rinds with Salsa Ahogada
Alambres: Grilled Skewers of NY Strip, bacon, and poblano peppers
Queso Asado: Asadero cheese seared with toasted pasilla and cilantro. With Corn Tortillas
Sonoran Hot Dog: Bacon wrapped hot lat grilled with salsa, lettuce, white beans, pickled onions, tomato, cilantro mayo, cotija in bolillo
